Spiced gin clementines

Ingredients
  • 12 clementines or mandarin oranges
  • 250g sugar
  • 400ml water
  • 6 thin slices of fresh ginger root
  • 2 cloves
  • 1 stick cinnamon
  • 150ml gin (or use brandy/rum)
  1. You will need two clean, empty 500ml jars.
  2. Remove the peel and white pith from the citrus. Pack the fruit into sterilised jars.
  3. Make the spiced syrup by placing the water, sugar, spices and ginger on to a pan and simmering gently for 10 minutes.
  4. Pour the syrup over the clementines, use half in each jar, then top with the gin.
  5. Set aside for a week for the flavours to develop before using. These will keep for up to six months in a cool cupboard.
